This Green and Purple Fresh Pea Salad with Yuzu Dressing is an incredibly fresh, crunchy salad that is sweet, sour and oh so good.
I had never tried purple snow peas before I received a sample from Frieda’s Produce. Although my eye registered that they were purple, the flavor was, well . . . green. My 7 year old was tasting along with me, and when I said they tasted so green, she said “Green is not a taste mom! It’s a color!” This coming from a kid who eats blue things that taste like red things that taste like orange things. Please.
By using the word green I mean fresh, clean, vegetal. What a fresh pea should taste like. Regardless if it is purple or not.
This salad comes together in about 10 minutes, so it is an ideal quick and easy side dish. Take this to a BBQ or potluck, and watch it disappear.
The yuzu no sui is a salted yuzu juice. If you would like to substitute the yuzu juice, I suggest lime juice. Be sure to season with salt if you substitute, as all the salt in this dish comes from the yuzu juice.

- 2 cups sugar snap peas sliced in half on the diagonal
- 1 cup purple snow peas sliced in half on the diagonal
- 2 tablespoons Yuzu No Sui (yuzu juice)
- 3 teaspoons extra virgin olive oil
- 1 teaspoon raw sugar
- 1/4 teaspoon ground ginger
- sesame seeds for garnish

- Place the sugar snap peas and purple snow peas into a medium bowl.
- Whisk together yuzu juice, olive oil, sugar, and ginger in a small bowl.
- Pour the dressing over the peas, stir to coat and let sit for 10 minutes for the peas to absorb the dressing slightly.
- If desired garnish to salad with sesame seeds.
- Serve immediately.
Yuzu No Sui is salted yuzu juice. If you do not have a Japanese market in your area you can purchase it here.
