
This recipe was developed in 2013, as a hastily thrown together way to save a Christmas that wasn’t going as planned. Kind of like Christmas 2020 is going to be for so many of us.

Pantry cooking has become second nature to so many people since the global pandemic began, as we were encouraged to stay in our homes to stop the spread of a deadly virus. Local restaurants were closed down, and if you wanted to eat you had to cook.
A well stocked pantry can truly save the day, as mine did on that Christmas Day. That Christmas was going to the last one my mother had, so this ham is rather special to me.
